Brussels spouts. The name of this vegetable causes most kids across the world to shudder (or so I’ve been told). This tiny cabbage-like vegetable is much maligned for good reason. It’s not usually cooked correctly or creatively.

But Mom, I HATE them!

Growing up (and for much of my life), I intensely disliked Brussels sprouts. Luckily, both my parent’s did too. I only remember one occasion that my mother cooked them and everyone decided nobody wanted to eat them again. Ever.

However, I was served this vegetable at a dinner party some years ago. I did not want to appear rude since they were already on my plate. The sprouts were made with bacon, and I was amazed! What a difference a little bacon makes. I couldn’t believe how delicious they were. Amazingly palatable! Sweet with a hint of wasabi flavor.

Everyone says bacon makes everything taste better, but who actually believes that?? (I never did). In this case, I was pleasantly surprised. I was also relieved that I didn’t have to lie to my hostess! I could honestly say I liked them.

Yummy Brussels Sprouts with Bacon

Ingredients

6 slices bacon, chopped

1 cup Brussels sprouts, halved

Directions

Chop bacon into small pieces, then cut sprouts in half. Turn stove heat on to medium. Add bacon to a non-stick pan, and cook until it starts to make grease. Then, add Brussels sprouts. As they cook, turn over sprouts so they get brown on each side. This should take about 15 minutes.

Voila! You can now add a new vegetable to your dinner menus AND impress your friends. It doesn’t hurt that these tiny vegetables are packed full of Vitamin A (13%), B (10%) and C (124%), omega-3 fatty acids along with magnesium and iron. And, they only have 38 calories per cup.

Now is the time to plant Brussels sprouts. This plant is really fun to grow AND tastes better fresh than from the grocery store.
